Baked Eggplants and Beef Recipe.
A recipe of baked eggplants and beef that will impress your guests at lunch.
- 1 kilogram of Beef.
- 5 Eggplants.
- 250 gr. Parmesan.
- 4-5 TBS of Olive Oil.
- 2 cloves of Garlic.
- Half a cup of Butter.
- 1 glass of white wine.
- Salt – Pepper.
For the Sauce.
- 200 gr grated Parmesan.
- Half a cup of Milk.
For the Garnish.
- Red Pepper Grains.
Execution and Preparation of the Baked Eggplants and Beef.
Cut Eggplants into slices and put them for two hours in a bowl of salted water. Cut the cheese into slices. Wash and cut the Beef in small pieces. Spread the small pieces of a calf on a cutting surface, beat them to spread and put salt and pepper. Then take a slice of cheese and put it in the middle of each piece of beef. Roll each piece in roll and tie it with special cooking thread. Chop and Sauté the Garlic.
In a large non-stick pan, pour the olive oil and as soon as it gets hot, put the Garlic. When the Garlic gets gold, add the rolls of the Beef to the pan. Watch and turn the pieces frequently to make them even brown. When they get to color, add the wine to the pan and let the rolls be cooked for a few minutes. Alcohol from wine must evaporate to remove the pan from the fire.
Preheat the oven to 356℉. Remove the Eggplant slices from the water, rinse them and wipe them with absorbent kitchen towels. Put them in a non-stick pan with butter to Sauté and just brown on both sides and lower the pan from the fire. Remove the special thread from the rolls and wrap around each roll an Eggplant slice. Then, dip a baking pan with butter and put it in the Eggplants with Beef. After placing them next to each other, bake them in the preheated oven for 20 minutes.
At the same time, prepare the sauce. In a saucepan, pour the milk and Parmesan and stir continuously until they become a thick sauce. Remove the eggplants and the meat from the oven and put them on a serving platter. Pour it over with the cheese sauce and serve. If we want, we can garnish with red pepper. Serve the baked eggplants and beef with red wine.
